How is this different from Shopify's bulk editor?

Shopify's bulk editor works on a selection you assemble by hand and has no undo. Variant Fixer selects by filter and keeps a reversible history of every operation.

What happens if I make a mistake on thousands of variants?

Revert the operation. That is the reason undo exists - bulk editing without it is why most merchants avoid bulk editing.

Can I change inventory and SKUs, not just prices?

Yes. Prices, compare-at prices, inventory quantities, SKUs, and barcodes can all be edited in bulk.
